In our EaT Restaurant, every dish is created to enhance the many aromatic aspects of our extra virgin olive oils. The tasting journey is an experience of discovery from the appetizer to the dessert: the menu is inspired by the traditional recipes of Tuscia which it interprets with a careful and genuine cuisine, bringing the taste and beauty of simplicity to the table. Almost all of the raw materials come from our farm and our biodynamic garden or from local suppliers. The building is set in our centenary olive grove: the large windows of the inner room create magnificent living paintings of the changing scenes outside, while the wide outdoor area offers an experience of taste and beauty without filters.
This experience is designed for those who want to understand what makes an extra virgin olive oil a high-quality product, listening directly to the words of those who carry out choices every day to produce an EVO oil with an excellent sensory profile.
After a visit to the company oil mill and a short walk in the olive grove, it will be possible to taste the extra virgin olive oils together with the tasty fruit and vegetable specialties of the company’s garden and local cured meats and cheeses, accompanied by a glass of wine.

In the olive grove: the encounter between wisdom and taste An experience to discover the olive grove, the place where the quality of extra virgin olive oil begins. Guided by those who take care of our plants every day, it will be possible to discover the principles of olive growing that respect biodiversity and nature, immersed in an environment of peace and life.
The approximately 40-minute walk will end at the restaurant, where you can enjoy a gastronomic experience thanks to a tasting menu designed to enhance every drop of Olio Traldi.

In case of bad weather, the walk in the olive grove will be replaced by a visit to the oil mill.
This experience is designed for those who want to breathe the energy of the new oil harvest and taste the freshly milled oil.
Throughout the month of October it is possible to attend the harvesting of olives, a very delicate and fundamental phase which guarantees the quality of the oil. Led by one of our experts, it will be possible to learn about the parameters that define the right time of harvest and the techniques adopted to bring healthy and fresh olives to the mill. After the on-site visit, the guided tasting will take place at the company oil mill, using the techniques of the professional tasters.
